chocolate oat biscuits.


I still had my HeB left for today and i was craving chocolate so this happened. Although I’m not complaining as I still got my chocolate fix at only 1syn for 3 biscuits 😍

You will meed:

35g oats (blend this to a powder)

2 tsp unsweetened Cocoa powder (1syn)

2 tbsp sweetener (more if you have a really sweet tooth)

1 egg

Put everything into a blender, line a baking tray spoon mixture onto tray I made 3 biscuits and pop into the oven for about 7-10 minutes.


nandos style chicken and spicy rice


I was bored so thought I would try something different and nandos popped into my head so thought i would wing it. Turned out pretty good if I do say so myself.

Spicy rice:

1/2 onion

1/2 red pepper

1/2 yellow pepper

Handful of peas and sweetcorn


Chicken stock

1 tsp paprika

1 tsp chilli powder

1 tsp ground cumin

Sprinkle of Cajun

Start by frying the onions and peppers, add rice followed by stock and enough boiling water to cover. Stir in spices (add more or less depending on your preference this was quite spicy!) Add peas and sweetcorn. Keep stirring and add more water if needed. Cook for about 20 mins or until rice soft.

Chicken and sauce:

Chicken breast

1/2 tsp mixed herbs

1/2 tsp peri peri herbs

1 tsp lemon juice

1 tbsp extra light mayo (1syn)

Pop chicken breast in a loose foil packet and then into the oven for about 25 mins.

Meanwhile to make the lemon and herb peri peri style sauce add the peri peri and mixed herbs and crush using the back of a spoon, try and crush this to a fine powder as you can, then simply add mayo and lemon juice mix together.

When chicken is cooked pour the sauce over the chicken and pop under the grill for 5 mins.

Serve with corn on the cob.

syn free spring rolls


I found this recipe online and was skeptical but it turned out to be very good. We had it on the side of a chicken stir fry.

To make two you will need:

4 lasagne sheets

Stir fry vegetables

Soy sauce


In a large frying pan boil enough water add a dash of salt. Put the lasagne sheets (depending on size of frying pan, I used a large pan and maximum of 4 sheets at one time) into water and let boil for 5mins.

In another frying pan, spray with fry light, fry vegetables and add soy sauce keep stirring it around until veg softened.

Line a baking tray and place one lasagne sheet on it, spoon in the vegetables keeping away from the Edge. Put another lasagne sheet on top and press together around edges if it doesn’t stick whisk up a egg, dip your finger into egg and wipe over the edges on bottom lasagne sheet then press together. Repeat for second spring roll.

Spray with fry light and pop into a pre heated oven ( mine was on max) for 15-20 minutes or until late crispy!

chocolate jelly bites.


I saw a recipe online for something similar so decided to change a few bits and make my own version.

You will need:

2 sachet of gelatine

1 tbsp Cocoa powder (1.5 syns)

3 tbsp sweetener

1/4 pint of boiling water

2 tbsp of vanilla Muller light yoghurt

Mix everything together in a bowl. Pour into moulds (I used a ice cube tray) pop into fridge for about 30 mins or set.  I made about 20 sweets and 1.5syns for the whole lot.

meat kebabs


Meat and veg kebabs!

So easy and great either Grilled or on the bbq.

You will need:

1 yellow pepper

1 red pepper

Handful of button mushrooms

3 red onion

Handful of cherry tomatoes

400g chunks of beef

3 large chicken breasts cut into chunks.

Wooden skewers


Chop peppers and onions into desired size.

Start with a pepper as will stop anything falling off. Then I like to add meat followed by veg then meat then veg ect and finish with a pepper again but it’s completely up to you. You can also just do veg kebabs and use as your veggies on the side of any dish.

These are soo easy and make dinner time abit more exciting. Either serve on their own or great with new potatoes or sweet potatoes fries 😍.



So I have been told that these might not actually be syn free 😱. Apparently they come under a ‘tweak’. I’m not 100% sure. So perhaps have a read about them yourself.

These were soo good I will be making them again and again and again 😂.

All you need is potatoes, seasoning wooden skewers, a tub and a microwave.

Thinly slice potatoes.

Pat dry using kitchen towel.

Season with whatever flavour you like ( I used salt and pepper)

Slide onto skewers leaving a fair gap.

Place skewers over the tub (I used a lunch box) making sure the potatoes aren’t touching the sides.

Pop into microwave on full power for about 5mins. Longer of needed.

The browner they go the crisper they are!

Cheese steak and fries


This does not feel like a healthy dinner! But it’s free!!

Enough steak for two people.

1/2 green pepper

1/2 yellow pepper

1 red onion

Worcester sauce

50g cheese (2xHeA) or 10 syns

Potatoes (enough to make two portions of chips)

Cut potatoes into chips part boil for 4 mins. Dry off on kitchen towel. Spray a baking tray with fry light add the chips spray again with fry light pop in oven for about 25 mins.

When chips are nearly done lightly fry steak pieces add the onions and peppers. Add some Worcester sauce keep frying till cooked.

Take chips out of the oven put into Pyrex dish. Top with steak and veg. Add cheese pop back into oven for 5mins or till cheese melted.

Cheesey meatball pasta bake!


I did top this dish with cheese but i took the photo before i added it…ooops!

Anyway this was sooo good my other half even took the left overs to work for lunch the next day.

You will need:


400g lean mince 5% fat

2 spring onion (chopped)

mixed herbs

chilli powder

1 egg

4 cherry tomatoes (chopped)

1 clove garlic

mix everything into a bowl, separate into 12 meatballs.


400g passata

200g beef gravy

Worcester sauce

mixed herbs

1 onion

1/2 red and 1/2 green pepper.

handful mushrooms

50g cheese (2xHeA) or 10syns

enough pasta for two (boiled for 5/10 mins untill slightly softened)

Add passata to a large saucepan simmer add herbs, veg, gravy and Worcester sauce. Fry meatballs for 5mins. Put drained pasta into Pyrex dish add meatballs top with sauce. cook in oven for 15mins add the cheese topping and put back into the oven for 10 minutes.
